Dinner





Our dinner yesterday. baked barramundi fillet with fresh vegetable salad.

This is how I cook barramundi fillet or any fish fillet, just bake it in the oven for about 40 minutes with lemon juice, olive oil and pepper (no salt). It's quick and easy.

Last Sunday's dinner

We went to Goulburn in the Southern Highlands, NSW last Sunday to visit my hubby's daughter who was in the hospital for she fell off her horse and suffered a broken ankle and had a surgery. She was doing really good  after the surgery and is back home since yesterday.
It was late when we left the hospital and decided to have dinner in one of the popular restaurants in Goulburn before we started the long trip going back home. We have been in this restaurant  a few times and every time we visit there,  I don't miss to order their yummy omelette and so did hubby.

My omelette consist of ham tomato and mushrooms serve with vegetables. Yum!

Last Night

We decided to go out for a dinner last night at Lone Pine Tavern which is close to where we live.  It is a new pub with fantastic atmosphere and quality food and drinks. One thing what I like best at the tavern is that it has  a place for the kids where they can have fun or just to watch a movie for free. Anyways, here is what I had ordered for my dinner, char-grilled swordfish with warm anti-pasto salad, roast tomato and pine nut salsa.

 And below is a chocolate pudding as my dessert.

Pasta Carbonara

I bought a Dolmio Italian Meat Base Carbonara sauce in a packet yesterday. It was my first time cooking pasta carbonara using this sauce. I added only, cooked pasta, diced bacon, cream and cheese, and cooked it according to the instruction at the back packet. I garnished it with finely chopped parsley before serving to add extra flavour. It was delicious.

Mushroom with oyster sauce

Dinner last night was fantastic, we had grilled beef, vegetable salad and mushroom with oyster sauce. Me and hubby absolutely love mushroom and every weekend we always grab a chance to cook mushroom either in the bbq or stir-fry it with oyster sauce to have extra flavour. I even make mushroom omelette sometimes for breakfast. Since it was raining yesterday, hubby didn't get the chance to fire up our bbq so I thought to just stir-fry the mushroom with oyster sauce.

button mushrooms
crushed garlic
chopped onion
oyster sauce
pepper
sesame oil

Dinner

Last night, we felt like in a seafood kind of mood and decided to go to Bucks Diner near the train station. I bought a seafood pack with chips for me: 4 fish cocktail, 4 prawn, 4 calamari with tartare and seafood sauce while the kids had the "fish of the day" and chips.

Pizza for dinner

One Sunday of last month, we decided to have pizza for dinner and went out to our favourite pizza place, Maggie's Homemade Pizza. It is not always that we have pizza and we were particularly excited. The owners, husband and wife run the popular eatery for nine years. The ingredients are fresh and they make the dough themselves.

Baked pasta

It has been quite a while since we had baked pasta on the table. Dorothy likes it very much but David doesn't. He is not a pasta lover like his big sister. One night, I surprised them with a baked pasta for dinner. Obviously, David wasn't look happy when he saw the baked pasta on his plate with roasted mixed vegetables as a side dish. I told David to eat his baked pasta even a little to make mummy happy and he did but only for a few pieces and after eating he said that he had enough.
I used baked pasta sauce and just added premium beef mince, pasta and sprinkled it with grated cheese and baked for 20 minutes at 200'C .

Last night's dinner

After school yesterday, I took the kids to the mall to do some grocery shopping. When we arrived David complained that he was hungry. Hearing him, I knew exactly what he meant, he wanted to indulge in his favourite pizza in Pizza Hut. My kids know that between 3:00 pm to 6:00pm on weekdays Pizza Hut has special offers, and one of them is a personal pan pizza with a can of drink for only 3.50$. So I bought 3 for each of us because my tummy started rumbling too. Of course, they had their favourite, the Hawaiian while I had a supreme.

Dinner

The other night, I had fried marinated bangus (milkfish) with rice. It has been quite a while since I had fried "bangus". I missed it already so when I got a chance to visit one of our Filipino shops here last weekend, the first thing I looked for was a pack of marinated "bangus". I was lucky that they had a few packs left. I just bought a pack with 4 pieces in it for I am the only one who eat "bangus". I only eat "bangus" when it is marinated and fried and my favourite is the belly part. I don't like when it is cook in any other way.

Roasted Chicken

It has been awhile since we had roasted chicken on the table, so I decided to get one whole chicken for roasting during our late night grocery shopping last Thursday. I planned to roast it with fresh rosemary and garlic last Friday for our dinner with rice. We all love the scrumptious smell of roasted chicken with rosemary and garlic.

Our visitors last Sunday

My step daughter and her family came over for a visit. They live about 2 hours from where we live in the Southern Highlands of NSW. It is always great to see them after awhile that we haven't seen each other. Although we talk from time to time over the phone catching each other but its a great feeling to see them and spent some time with us.
I prepared a special dish for that day, garlic and herb lamb shanks cooked in a slow cooker. Hubby loves so much this dish but because he is on a diet, he cannot have this dish always. Besides the kids and I are not a big fan of lamb. I bought a garlic and herb lamb shanks recipe base and just added carrots, a can of tomato, tomato paste and 4 pieces of lamb shanks, and placed everything in the slow cooker and cooked on high for 4 hours. The thing that I really like cooking in a slow cooker is it tenderizes the meat and vegies, and blends flavours. It is so yummy.

Raining again..

It has been raining on and off today with moderate winds. A gloomy and dreary day as expected and a perfect time to sleep. But nope, taking a sleep in the warm cozy bed is far from my agenda today. I have many things to do and besides I promised myself to do more blogging today while the kids are at school.
It is supposed to be Dorothy's District Cross Country Run today which has been re- scheduled twice already due to the wet weather. And again it's obvious, Mother Nature doesn't want the event to happen today, not just yet. It is so wet and the ground is awash with puddles. Dorothy is a bit frustrated for she really wanted the event to be over and done with, win or loss, she really doesn't care. All she is looking forward to is the fun and excitement of being in the school team.
