Dinner
Our dinner yesterday. baked barramundi fillet with fresh vegetable salad.
This is how I cook barramundi fillet or any fish fillet, just bake it in the oven for about 40 minutes with lemon juice, olive oil and pepper (no salt). It's quick and easy.

Lunch yesterday
I made a mango chicken curry for our lunch yesterday, a perfect food for a cold day. I just bought a Mango Chicken Curry Simmer Sauce and added 1 kg of diced chicken and 2 diced medium size potatoes, and served on a bed of jasmine rice.

Tomato and cucumber salad
This was sometime last February when I was flooded with cherry tomatoes from the garden. I was trying to figure out what can I do with my tomatoes. I couldn't dried them during those times because it was raining. I thought to make pickled tomatoes but I couldn't get a chance. Then a friend of mine suggested to try tomato and cucumber salad, and so I did. It was my first time to try it and I fell in love with it. I thought hubby wouldn't love it but glad he did but the kids didn't like it.
It's simple, light and refreshing.

Comfort food
Talking about comfort food on cold days there is only one thing that comes to my mind, a food which is good to eat and so simple to make. Cold days make me hungry most of the time and makes me crave for this particular food that I used to eat during snack time in the Phils. I dont eat this food very often here in fact I can't even remember when was the last time since I have this food on the table.
We call it pospas or rice poridge.

knorr chicken broth cubes
cups of water
I just garnished it with finely chopped spring onions and fried garlic. Yummy.

Last Sunday's dinner
We went to Goulburn in the Southern Highlands, NSW last Sunday to visit my hubby's daughter who was in the hospital for she fell off her horse and suffered a broken ankle and had a surgery. She was doing really good after the surgery and is back home since yesterday.
It was late when we left the hospital and decided to have dinner in one of the popular restaurants in Goulburn before we started the long trip going back home. We have been in this restaurant a few times and every time we visit there, I don't miss to order their yummy omelette and so did hubby.
My omelette consist of ham tomato and mushrooms serve with vegetables. Yum!

Last Night
We decided to go out for a dinner last night at Lone Pine Tavern which is close to where we live. It is a new pub with fantastic atmosphere and quality food and drinks. One thing what I like best at the tavern is that it has a place for the kids where they can have fun or just to watch a movie for free. Anyways, here is what I had ordered for my dinner, char-grilled swordfish with warm anti-pasto salad, roast tomato and pine nut salsa.

Pasta Carbonara
I bought a Dolmio Italian Meat Base Carbonara sauce in a packet yesterday. It was my first time cooking pasta carbonara using this sauce. I added only, cooked pasta, diced bacon, cream and cheese, and cooked it according to the instruction at the back packet. I garnished it with finely chopped parsley before serving to add extra flavour. It was delicious.

Chocolate cake
Yesterday afternoon, Dorothy baked a cake for us. I just bought her a
Premium delux premium chocolate mix to use and a ready to spread rich
chocolate fudge for frosting. She loves cooking and baking and it is
amazing that at this young age of her she can already bake a cake
without my supervision.

Penne pasta with bacon and spinach
While surfing in the internet sometime last month, I found a recipe which is quick and easy to prepare. It is a light meal which will compliment anything. Since me and my daughter are a great pasta lovers ,and I had fresh tomatoes in the garden during that time, I decided to try it.
This is a great dish. I sprinkled feta cheese and we loved it.

Recipe: Ingredients
- 1 (12 ounce) package penne pasta
- 2 tablespoons olive oil, divided
- 6 slices bacon, chopped
- 2 tablespoons minced garlic
- 1 (14.5 ounce) can diced tomatoes
- 1 bunch fresh spinach, rinsed and torn into bite-size pieces
Directions:
- Bring a large pot of lightly salted water to a boil. Add the penne pasta, and cook until tender, 8 to 10 minutes.
- Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Place bacon in the skillet, and cook until browned and crisp. Add garlic, and cook for about 1 minute. Stir in the tomatoes, and cook until heated through.
- Place the spinach into a colander, and drain the hot pasta over it so it is wilted. Transfer to a large serving bowl, and toss with the remaining olive oil, and the bacon and tomato mixture.

Pavlova
Before Christmas, Dorothy asked me if we can make a pavlova for Christmas. She loves pavlova so much and really wanted to have pavlova as one of our desserts after our Christmas lunch. Since I would be busy on that day, I just promised her to buy a pavlova base from Woolies and let her do the topping . I just bought the fruits that she loved to use as the topping and whipped the fresh cream for her.
